Garlic Butter Smash Potatoes + An Easy Dinner

Hello friends!

I’ve got another recipe for ya today. I also have a full more aesthetic + asmr vibey video of this meal over on my YouTube channel if you want to check that out!

The main reason for this post and video was for the garlic butter smashed potatoes. They’re SO. GOOD.

But I also included the “recipe” for the pre-made chicken flautas I got from Costco. I put recipe in quote because it’s less of a recipe and more of heating an oven LOL

Prep Time: 25 minutes

Cook Time: 35 minutes

Total Time: 60 minutes (with passive time to multitask!)

Servings: 4

INGREDIENTS:

+ 18 fingerling potatoes

+ 6 tablespoons of melted butter

+ 1/2 teaspoon of pepper

+ 1/2 teaspoon of salt

+ 1/2 teaspoon of dill

+ 1/2 teaspoon of basil

+ 1/2 teaspoon of onion powder

+ 6 cloves of minced garlic (or however much garlic you like)

+ 8 pre-made chicken flautas (I got mine from Costco)

OPTIONAL:

+ Salsa

+ Cheese dip

+ Shredded cheese

 
 

INSTRUCTIONS:

  1. Preheat oven to 375 degrees

  2. Wash fingerling potatoes and boil until fork tender

  3. Prep butter drizzle: mix melted butter, salt, pepper, basil, onion powder and minced garlic in a small bowl

  4. Drain and dry potatoes and place them on baking pan

  5. Using the bottom of a mason jar or cup, gentle smash the potatoes

  6. Baste the smashed potatoes with butter mix

  7. Place chicken flautas in another over safe dish

  8. Place both the chicken flautas and smashed potatoes in oven for 15-17 minutes

  9. Broil for 3-7 minutes to achieve a crispier finish

  10. Remove from oven, let cool for 3 minutes

  11. Plate and serve! Enjoy :)

OPTIONAL:

  1. Heat cheese for dipping

  2. Add shredded cheese on flautas (microwave 10-15 seconds if cheese isn’t melting)
